Why do aflatoxins threaten food security at a global level?

Aflatoxins — produced by Aspergillus fungi in hot, humid conditions — contaminate staple crops during harvesting, storage, and transport. Beyond the direct health hazard, including carcinogenic effects on consumers, widespread crop contamination generates significant economic losses across supply chains, compounding food insecurity in both developing and higher-income markets.

How does climate change intensify the risk of aflatoxin contamination in food?

Rising temperatures and increasing drought stress weaken plant defences, making crops more susceptible to mould. Warmer, moister conditions also expand the geographic range of Aspergillus and alter insect vector behaviour. Researchers are developing fungal-resistant crop varieties through conventional breeding and genetic engineering, but progress is constrained.
